Cheesecake

Every year on her birthday my roommate's mom would bring her up the most delicious cheesecake, and this past weekend for her birthday I emailed her mom for the recipe so that she would not go a birthday without her beloved cake. I love it because it is not too sweet and just the right amount of vanilla and bitterness.

Combine the graham cracker crumbs and butter

Then press into the bottom of a spring form pan

Combine the cream cheese, sugar, vanilla and eggs in a bowl, and beat until smooth

Smoothness... Place into the pan and bake for around 30 minutes.

After baking 30 minutes mix up some sour cream, and vanilla and then pour on top of the cake and crank up the oven some more and bake for a around 7 minutes and then done! 

This is the finished cake with a little mustached friend I forgot to take a picture when actually serving, sorry but just pop off the outside of the pan and place on pretty serving plate or cake stand!

This is such an easy dessert and sooo delicious with a little cappuccino or espresso after dinner, heaven.

Ingredients:
Crust: 1 1/2 cups graham crackers, 1/3 cup melted butter -- crush graham crackers and mix with melted butter, moled into bottom of the pan.
filling: 2 -- 8 oz. Packages of cream cheese      2/3 cup sugar,       2 eggs        2 tsp of vanilla, 

Stir cheese until soft. Add eggs, vanilla and sugar to the cream cheese and beat until creamy. Pour into crust. Bake at 350 degrees for about 30 minutes.

Topping: 1 1/2 cups sour cream, 4 tablespoons sugar 2 teaspoons vanilla -- mix
When cheese cake is done pull out of the oven and put the topping on. Increase the temperature to 450 degrees and bake for 7 minutes.
