Bacon Wrapped Tuna

We still have lots and lots of fish from my dad, and one of my favorites is Tuna. This really is such a easy meal there are only 3 steps. On a rainy summer night it was the perfect light steak, open the window and cook with music and rain in the background - heaven.

On the menu:
Bacon Wrapped Tuna with Balsamic Glaze
Small Side Salad with Homemade Ranch Dressing (from my mom)

On the Playlist:
Rhythm of the Rain - Jerry Jeff Walker
Songs About Rain - Gary Allen
Have You Ever Seen the Rain - Creedance Clearwater Revival
There's Something Sexy About the Rain - Kenny Chesney
Rain in Lafayette - Pat Green
Blue Eyes Crying in the Rain - Stoney LaRue

For the fish: make the steaks about 1 inch thick, season heavily with salt and pepper and wrap with bacon securing with a toothpick.

It's really better grilled over coals because you get the kind of smokiness, but it was raining to we moved the grill inside! Try really hard to not overcook, a rare tuna steak is just so much better

For the sauce:
1 tablespoon sesame seeds
1/2 cup balsamic vinegar
1/3 cup soy sauce
1 tablespoon honey
3 tablespoons veal glaze (which they didn't have at our grocery store so we used a balsamic glaze)

It's really easy just combine all the ingredients into a sauce pan and reduce by half. (It will keep for about a week too). Right before serving, bring the sauce to a simmer and whisk in 1 tablespoon of butter cut into small pieces and cook until melted.

Voila! my husband likes to get all fancy with the way he serves his sauces, but it works for me and it was all delicious!
